Mandell Brooks brings 24 years of Southern Trace experience, leadership, commitment to service, and a passion for excellence to this new role. He manages the servers and bartenders in Arthur's, the Shark Shack, the beverage cart, the Halfway Café, and all banquet activities. Working in partnership with our Chef, Mandell will build strong working relationships with our vendors as he manages the ordering and inventories associated with food and beverages and together they will develop new menus and specials. Mandell is a native of Shreveport and he enjoys playing golf, fishing, and traveling with his fiance.
